I’m looking for something that would work for food, not a pocket knife. I want something simple that works like the folding spork. Does anyone know of any?

No, you can’t have a knife that is bare and has a snap-on handle. The knife blade always has to be sheathed, either in a separate sheath or by folding. The closest thing to that folding spork is something like the CRKT KISS knife: http://www.crkt.com/kiss.html
